The story behind the cup:
Farming
This batch was selected as close as possible to the Kerinci nature reserve, in the mists of the mountain. The coffee trees grow under shade in a maintained forest.
The soil is extraordinary, rich in ashes dispersed by the giant volcano, still in great activity. Alko producers apply different agroforestry experiments or polycultures with fruit trees.
Several producers work on additional crops in aquaponics, peppers grown in a
pond fish waste feeds plants.
Process
The cherries are collected and brought to one of the 17 villages. A first selection of cherries is carried out by flotation. The quality cherries are brought to the Alko drying center near the village of Jambi. The station starts with drying on a covered patio then beds for the microlots. The cherries are then stirred daily. The drying time varies between 28 and 30 days.
Dried cherries whose grain has a moisture content of less than 13% are shelled. The beans are then manually sorted one by one to eliminate defects.
